What sets one piece apart from another

Start with what goes in it and how long it stays there:

• Salad bowl with tongs. It comes with the serving piece from the same line, which avoids the mismatched tongs in the middle of a buffet.
• Tiered dessert stand. It gains height instead of width — it solves a full table with no surface left.
• Chafing dish. It keeps the dish hot during service, which is what separates a set buffet from an improvised one.
• Platter and fruit bowl. Support pieces that stay on the table before and after the food.
• With glass. Steel gives the structure and glass takes the food: easy to wash and no interference with taste.
• Finish. Silver for a classical table, gold for the evening, black nickel and polished for a contemporary one.
