What to consider first

• Carving fork. It holds the roast without piercing too much, which keeps the juices in the joint.
• Plain blade. It cuts a clean slice; a serrated blade tears the fibre and ruins the presentation.
• Firm handle. A secure grip, because carving at the table is done standing and with force.
• Pizza and cheese cutters. Specific pieces for what an ordinary knife does not cut well.
