What sets one pot apart from another

The material decides the cooking, and that is how you choose:

• Enamelled cast iron. Slow cooking, sauces, roasts and bread. The weight is what holds the heat, not a flaw.
• Stoneware. It goes to the oven and to the table with the colour of the china, and spreads heat without hot spots.
• Nonstick aluminium. Light and quick to heat — the everyday pan for rice and sautéing.
• Stainless steel. It sears meat and builds the fond that becomes a sauce; it takes high heat and metal utensils.
• Low braiser or tall cocotte. The low one evaporates and reduces; the tall one holds moisture and is the one for long stews.
• The lid. The seal is what keeps the steam in and makes slow cooking work.
