What sets one pot apart from another

Height and material decide the cooking:

• Tall stockpot. It boils pasta with enough water to keep it from sticking, and makes stock without reducing too early.
• Enamelled cast iron. It holds the heat and is what makes a long stew work over a low flame.
• Enamelled steel. Lighter and quicker to heat, for boiling water in quantity.
• Heavy lid. It keeps the steam in and the temperature steady through the cooking.
• Side handles. A tall pot full is very heavy — firm handles are a matter of safety, not finish.
• Capacity. Choosing by the number of people avoids the pot that only leaves the cupboard at Christmas.
