What to consider first

Individual portion. It goes from oven to table without transferring, keeping the dish hot to the end.
With a lid. It arrives closed at the table and the opening becomes part of the service.
Stoneware or cast iron. Stoneware is lighter; iron holds the heat longer.
In sets. One per place, and different colours help identify each person's dish.
