What to consider first

• Sealed lid. It protects from damp and odour, and is what lets the jar live outside the cupboard.
• Glass with metal. Glass takes the food and steel gives the structure, without affecting the taste.
• 18/10 stainless steel. It resists the acidity of preserves, which attacks ordinary metal.
• Capacity. Choosing by real consumption avoids preserves sitting at the bottom of the jar.
