• Straight sides. They help a soufflé rise and hold the shape of the portion.
• Capacity. An individual portion asks for a smaller piece than you would think; too large and it dries out.
• Enamelled stoneware. It goes in the oven and under the grill and serves in the piece itself.
• In sets. One per person, and different colours help identify each dish.
