What sets one canister apart from another

The lid decides the keeping; the size decides the consumption:

• Sealing lid. It protects from damp and outside smells — what keeps coffee and flour for weeks.
• Garlic keeper. Ventilated on purpose: garlic in a closed jar sprouts and goes mouldy.
• Enamelled stoneware. It blocks light, which degrades coffee and seasoning faster than time does.
• Wooden lid. It seals and gives a warm contrast over the coloured stoneware.
• In sets. Different sizes in one colour organise a counter and make labels unnecessary.
• Capacity. Choosing by real consumption avoids staples sitting at the bottom of the jar.
