What sets one bowl apart from another

The lid and the mouth decide daily use:

• Sealed lid. It protects from damp, which is what cakes sugar — the real problem in this category.
• Wide mouth. The spoon goes in without scraping the rim or spilling on the tray.
• With its own spoon. It stays with the piece and stops you using the coffee spoon, which comes back wet and cakes the sugar.
• Glass. It shows the level and saves opening to check.
• Enamelled stoneware. Colour on the table and protection from light, in the same tone as the other coffee pieces.
• Stainless steel. Resistance and a formal reading, for a service tray.
