What sets one platter apart from another

The material decides how it behaves in the oven; the shape decides what fits:

• Enamelled stoneware. It browns evenly and reaches the table with the colour of the china, without looking like a roasting tin.
• Cast iron. It holds the heat far longer after leaving the oven.
• Rectangular. It uses the oven shelf better and takes portions in a row.
• Oval. It follows a whole roast or a bird, with less wasted corner.
• With side lugs. Somewhere to grip with a glove without slipping — a small detail that solves the main problem.
• Silver plate and metal. For serving cold and for a set table, without going through the oven.
